Strawberry Waffles
These strawberry waffles are full of flavor and love—no heart-shaped griddle required! Lightened with strawberry puree and perfect with fresh berries, a dusting of sugar, or a dollop of whipped cream.

Strawberry Waffles
Serves: 6 large waffles | Prep Time: 10 min | Cook Time: 6-8 min
Ingredients
- 2 c Better Batter gluten free pancake and biscuit mix
- 1 c milk or water
- 2 eggs
- 1 lb. strawberries, divided
Instructions
Preheat waffle iron until smoking hot and grease very well.
Place. In a bowl place better batter pancake mix.
Beat together Ingredients. In a separate bowl beat together eggs and milk or water. Pour into a blender with 8 ounces of strawberries. Blend until smooth and combined. This should make about 3 c of liquid – add a few more strawberries and blend again, if necessary until you get about 3 c of liquid.
Add liquid to pancake mix in bowl and stir lightly to just combine. Do not overmix, as this will thicken on standing.
Pour into waffle maker in batches and cook as directed for your iron, or until golden brown.
Serve immediately with strawberries and powdered sugar or whipped cream.
