Cup For Cup Claims

expand

Is your product actually cup for cup? I hear there is no such thing!

expand

Our products are designed to be used just like their gluten containing counterparts, and should easily substitute in your gluten recipes, as long as you follow the instructions on the back of the package. You will find there are minimal changes to your recipe (for instance swe do call for added liquid for yeast breads). Even in gluten baking, you get better results using the type of flour (high protein bread flour, cake flour, all purpose etc) called for in the recipe. We have designed several blends specifically to help duplicate the effects and results of these different types of flour. In recipes calling for specific types of flour, your best results will be achieved if you swap blend-for-blend as called for in a recipe, and measure by weight. Using the right blend, and the right measuring steps will ensure you have very minimal changes to most recipes. Any small changes we suggest will be clearly listed on the bag, and where no suggestion is made, no change is necessary.

I don't want to buy several kinds of flour - can I just use one flour for everything?

expand

Our Original Blend and Artisan Blend were both designed to work in most recipes. We have given suggestions for using them for the 3 most common types of flour - bread, all purpose, and cake - on the back of our 4lb bag. We suggest using one of these if you have to choose just one.

Measuring

expand

How do you properly measure the flour?

expand

Weight for weight is always recommended! Use our guidelines on each package for best results. If you prefer to measure by volume, best results are achieved with the "fork, spoon, knife" method! Whisk the flour with a fork, spoon it into a dry measuring cup, and level it off with the back of a knife. You should get great results.

How much should a cup of flour weigh?

expand

Just like gluten flours, each of our gluten free flour blends have a slightly different weight per cup. You should find they are roughly equivalent to US weight to volume measurements. Where a recipe fails to specify type of flour and only uses volume measurements (a cup etc), you'll get acceptable results for just about anything at 120g - 150g per cup. This is the most common weight achieved using the "fork, spoon, knife" method, and has been verified to work well for over 15 years.

Shelf Life & Storage

expand

What is the shelf life on your flour blends?

expand

In general we recommend using Better Batter Flour Blends within 2 years from date of manufacture. For best results, store in an air-tight container, below 85F. Your environment, storage conditions, humidity, and temperature may extend or shorten the shelf life of your product.

What is the shelf life on your mixes?

expand

In general we recommend using Better Batter Mixes within 18 months from date of manufacture. For best results, store in an air-tight container, below 85F. Your environment, storage conditions, humidity, and temperature may extend or shorten the shelf life of your product. Mixes that contain leavenings (yeast or baking powder) may have reduced performance after a 18 months.

Do I need to refrigerate/freeze your products?

expand

No, but it will extend shelf life if done properly
