GF Spinach Breakfast Bites
My husband first ate these spinach bites at a potluck and loved the savory flavors so much that he immediately requested the recipe from my friend who brought them to the party. He eats them for breakfast alongside a cup of coffee instead of his usual veggie omelette, but I can see these being on the menu as a brunch item or make them ahead and serve with a salad for a light lunch.
GF Spinach Breakfast Bites
Serves 6+
Ingredients
- 1 c (4 oz) Better Batter All-Purpose Flour
- 1 tsp salt
- 1 tsp baking soda
- 2 eggs, beaten
- 1 c milk
- 1/4 c unsalted butter, melted
- 1/2 c diced onion
- 8 oz cheddar cheese, grated
- 1 pkg frozen chopped spinach, thawed and squeezed out in a clean kitchen towel
- Cooking spray
Instructions
Preheat and prepare. Preheat the oven to 350 degrees. Line a 8x8 or 9x9 square pan with two pieces of parchment paper, overhanging the sides to make handles. Lightly coat the parchment with cooking spray. Set aside.
Prepare the batter. In a mixing bowl, stir together the flour, salt, and baking soda. In the measuring cup you use for the milk, add the beaten eggs and melted butter, stir to combine. Add the wet ingredients to the dry ingredients and whisk well to incorporate all of the flour mixture. Stir in the onion, cheese, and spinach; mix well.
Bake. Spoon the batter into the prepared baking pan. Bake 30-35 minutes or until the top is golden brown and springs back when gently touched.
Cool slightly and cut into squares and serve warm. Make ahead tip. These breakfast bites can be frozen after cooking. Just reheat at 350 for 10 minutes or until warmed through.
