Caramelized Pineapple Skewers
Grilled fruit is a summertime favorite — and pineapple is a must-try! The smoky-sweet flavor is irresistible, and the rum drizzle takes it over the top. If the grill’s already hot, this easy dessert is a no-brainer!

Caramelized Pineapple Skewers
Serves: 8-10 | Prep Time: 8 min | Cook Time: 2-3 min each size
Ingredients
- 1 fresh pineapple, trimmed and peeled (Take a grocery store short cut: pick up a trimmed and peeled container of fresh pineapple from the produce section.)
- 1/4 c granulated sugar
- 1 1/2 c Powdered Sugar, sifted
- 2 Tbsp white rum
- 1 Tbsp lemon juice
- Wooden or metal skewers
Instructions
Make the sauce. Combine the powdered sugar, rum, and lemon juice in a small bowl and whisk until smooth. Set aside.
Prepare the pineapple and grill. Cut the pineapple lengthwise into 8-10 pieces and thread each piece onto a skewer. Sprinkle the sugar evenly over the pineapple, on all sides.
Cook skewers on a preheated grill pan or over a barbecue grill at medium heat.
Cook for 2-3 minutes on each side or until golden and the sugar has caramelized. Drizzle with the rum sauce.
Serving notes: Serve these skewers as a dessert or a side. My family loves to eat them with Hawaiian chicken or grilled BBQ meatballs (pictured) and cilantro rice.
